I love pancakes, but these mini pancakes really give a whole new meaning to pancakes.
Because they are smaller, they are all fluffy and crispy. It’s amazing, I’ll be eating my pancakes like this for a while going forward!
Makes 2 bowls of mini pancake cereals
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon granulated white sugar
- 1 teaspoon salt
- 1 cup milk (preferably whole milk)
- 1 large egg
- 5 tablespoons unsalted butter, melted (and more butter for cooking)
Directions:
- In a medium bowl, whisk together flour, baking powder, sugar and salt.
- While whisking, pour in milk, add egg and melted butter to the dry ingredients.
- Mix until combined, but still some lumps. The batter should become a little foamy.
- Place batter in squirt bottle, pipping bag, or if you do not have a pipping bag, place the batter in a large zip-loc bag and cut the corner to create a small opening.
- With a buttered non-stick pan on low heat, drop desired amount for mini pancake and cook on both sides.
- Once all mini pancakes are made, place them back all onto the pan to heat up before eating!
