Waffle Mashed Potatoes

Making the most of my mashed potatoes.

Part of the fun of cooking is getting creative with leftovers!! We incorporated our mashed potato leftovers and added some key ingredients flour, eggs and buttermilk and ……voila! Mashed potato waffles!!

Ingredients:

  • 4 tablespoon unsalted butter
  • 1/4 cup buttermilk
  • 2 large eggs
  • 2 cups mashed potatoes
  • 3 tablespoons mashed chives
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup grated sharp cheddar cheese

Waffle Mashed Potatoes with Egg

Directions:

  • In a saucepan, brown the butter by melting it over medium-high heat. The butter will begin to crackle and cook off the water. As the crackling continues, bits from the butter will begin to brown and there will be a nutty aroma. At this point watch the butter closely, as the butter will burn quickly soon after.
  • Remove from heat and transfer the butter to a medium bowl.
  • Add buttermilk and eggs and whisk to combine.
  • Once combined, add mashed potatoes and two tablespoons of chives (saving the last of the chives for topping) and stir.
  • In a small bowl, whisk together flour, baking powder, baking soda, salt, pepper and garlic powder.
  • Add dry ingredients to wet ingredients.
  • Use a spoon and mix until just combined.
  • Heat waffle iron and use oil spray if needed (generally if you have not used the waffle iron in a while, it is best to use some grease).
  • Use a 1/4 cup and scoop a heaping amount onto the waffle iron.
  • Cook until golden and crispy.
  • Place waffle on cooling rack to avoid it getting soggy while resting.
  • Once all waffles are made, place the waffles on a cookie sheet and sprinkle cheddar cheese generously over the waffles.
  • Use the broiler on low until the cheese is melted, which will take about 30-45 seconds.
  • Remove from oven and sprinkle with chives.

For spicy ketchup, take two tablespoons of desired ketchup (I prefer, Sir Kensington’s Ketchup for the flavor and texture) and add Sriracha to taste. I used Fix Hot Sauce, which is an amazing hot sauce that I highly recommend!

Alternatively, slice some jalapenos in between the layers of waffles and add a fried egg on top!
